Gregg’s Cheese Taco Dip
1 pkg. Velveeta Cheese, cubed
1 lb. ground turkey
1 jar salsa
Brown turkey in a skillet until completely cooked.  Place cubed cheese in a crock-pot.  Add cooked turkey and salsa.  Set crock-pot on high for 1 hour to melt cheese, then turn to low setting.  Stir once or twice.

 

Patrick’s Taco Dip
3 or 4 jalapeno peppers, diced
2 tomatoes, diced
1 cup shredded cheese
1 container sour cream
1 pkg. taco seasoning mix
Place sour cream in a dish.  Stir in taco mix.  Top with peppers, tomatoes and cheese.

 

Michele’s Mac and Cheese
2 cups elbow macaroni, cooked
 2 ¾ cup sharp cheddar cheese
2 tsp. butter
2 tsp flour
2 cups milk
½ medium onion, minced
1 bay leaf
¼ tsp. sweet paprika
1 tsp butter
½ cup bread crumbs
Cook macaroni and set aside. In a large saucepan add butter and flour to make a roux. Then add milk, onion, bay leaf, and paprika.  Simmer.  Once the milk starts to thicken but not boil, add the ½ the cheese. Once the cheese is melted add all the noodles and coat.  Grease a baking dish and add half the noodles and half of the remaining cheese.  Then top with noodles and cheese.  In a skillet melt butter and toast the breadcrumbs.  Bake at 350* for about 30 minutes.
