3 Salads 1 Dressing

Dressing

In a large bowl mix:

2 cups mayo

1 Tbsp. honey

¼ cup white wine vinegar

1 Tbsp. Dijon mustard

Salt and pepper to taste

 

For French Style Dressing add:

1 tsp. Tarragon

1 tsp. sweet paprika

 

For Southwestern Dressing add:

½ cup sour cream

1 tsp. cumin

1 tsp. paprika

½ tsp. chili powder

 

Potato Salad

2lbs. potatoes, chunked

3 hard boiled eggs, sliced

½ cup celery, chopped

½ cup green pepper, chopped

½ cup scallions, chopped

¼ cup pickles, chopped

Mix with any form of the dressing

 

Shrimp Salad

2 lbs. cooked shrimp

½ cup peppers, chopped

½ cup onions, chopped

½ cup celery

Mix with French style dressing

 

Southwestern Chicken Salad

3 cups cooked chicken, cubed

½ cup onions

½ cup celery

½ cup pablamo peppers

Mix with Southwestern Dressing
