"Our Daily Bread" Fr. Peter Sutinga Dished from Ghana Africa

Fr. Peter Sutinga was a visiting priest from Ghana Africa who interned at Daybreak TV Productions in order to receive experience in the field of Communications.  Fr. Peter is still studying at the Gregorian University in Rome and will return to Ghana sometime next year.  It is his hope to open a radio station in Ghana, which will broadcast not only religious but educational and social programs as well.

Ghana Fruit Dessert
In a medium bowl combine:
3 bananas, peeled and chopped
2 oranges, peeled and chopped
½ fresh pineapple, peeled and chopped
½ cup water
Cover and chill at least 1 hour before serving.

Pineapple Drink
In a blender combine:
½ pineapple, peeled and chopped
½ cup or so of water
Blend well.  Serve cold.

Cassava Root Vegetable
Peel root and slice thin.  Place in boiling water and cook about 15 minutes.  OR roast cassava root like a potato – Wrap in foil and place in 350* for 45 minutes or 12 minutes in the microwave. BE CAREFUL THE ROOT IS VERY VERY WAXY AND THE WAX WILL MELT IN THE MICROWAVE!

Peanut Soup and Fufu
Steam a chicken breast with a sprinkle of curry powder, Adobo seasoning, salt, and ginger and garlic powder. In a stockpot melt 2 cups of peanut butter.  Add 2 cups of water and stir very well.  Bring to a boil and simmer about 15 minutes. Once the soup boils add ½ bag of spinach greens. Sever immediately with Fufu.

To Make the Fufu
Fufu is made with Plantain flour
Take 2 cups of plantain flour and in a heavy pan add flour and stir in boiling water a little at a time.  Stir constantly.  Add enough water until you get an oatmeal type of consistency. Serve on the side of the plate with soup.  (This is almost like a dumpling.)
