Christmas Cookies
Italian
Chocolate Cookies
4 c flour plus more if dough is to sticky
¾ c cocoa
4 ½ tsp. baking powder
½ tsp. each of salt, nutmeg, cinnamon and cloves
1 ½ cups plus 3 Tbsp. butter
1 ¼ c sugar
3 beater eggs
1 tsp. vanilla
1 can frozen orange juice, thawed (6 oz)
12 oz mini chocolate chips
2 c chopped up nuts
2 c chopped dates
Mix dry ingredients: Cream butter and sugar. Add beaten eggs, vanilla and
juice. Blend. Add dry ingredients slowly, beating after each addition. Stir in chips, nuts and dates. Shape into
balls. Bake on a greased cookie sheet at 350* for 8 – 10 minutes. DO NOT OVER BAKE. THEY ARE A SOFT COOKIE. Yields
12 dozen.
Icing:
1 lb. powered sugar
1 can pet milk (evaporated milk)
Coco – at least ½ cup to 1 cup depending on how dark and rich you want your
frosting.
Mix well and dip cookies into frosting to cover just the tops.
Almond Holiday Cookie
1 c butter
2/3 c sugar
1 egg
2 ½ c flour
½ tsp. salt
½ tsp. almond extract
1 egg white, slightly beaten
Ground and finely chopped almonds
Candied cherries
Cream together butter and sugar. Beat in egg. Stir in flour, salt, almond extract. Chill dough. Shape dough into small balls. Dip each ball into egg white then roll in almonds. Place on a greased baking sheet. With your finger press center down to make a well. Bake at 350* for 5 minutes. Remove from oven; again press down the center of the cookie. Bake 3 – 5 minutes longer or until lightly browned. Cool. Fill the center of the cookie with the icing and top with cherry.
Filling
2 Tbsp. butter
½ tsp. almond
¼ c shorting
1 egg white
2 c powdered sugar
Heat butter over a medium heat until brown in color. Cool. In a small mixing bowl add all ingredients, except butter.
Beat until light and fluffy add browned butter. Continue beating. If the filling needs to be thinned add a few
drops of water. If the filling needs to
be thickened add more sugar.
Holiday Delight Candy
1 cup each of pretzels, Wheat Chex cereal, Rice Chex cereal, Captain Crunch
cereal, and nuts. Melt white chocolate and pour over top. Mix well. Spread onto
a cookie sheet to cool. Break up and
serve.
